Trisodium Citrate

Airedale Chemical Trisodium Citrate holds the chemical formula Na3C6H507 its properties include a saline, mildly tart flavour and in appearance is a white crystalline powder and holds no notable odour. As a conjugate base to citric acid Trisodium Citrate serves to buffer changes in acidity. When it is present in a solution it will require more acid than normal to change and decrease the pH of the solution. This is a useful product trait as it makes it easier to make fine adjustments to acidity.

The citrate ion in Trisodium Citrate acts as a sequestering agent, this means that the citrate ion is likely to bind with other ions that are present in the solution, particularly calcium. In cheese, the calcium ions in the casein milk protein are replaced with sodium ions. When this happens the casein changes structure and exposes both water-loving and oil-loving ends. The casein is the emulsifier, even though sodium citrate is considered an emulsifying salt.

Trisodium citrate’s sequestering abilities are important in molecular gastronomy as well. Sodium Alginate Low Acyl Gellan, Low-methoxyl Pectin and Iota Carrageenan only gel in the presence of ions such as calcium. If the liquid to be used for hydration contains natural calcium ions, it is necessary to use a sequestrant like Trisodium Citrate to bind those ions and enable proper hydration.

Agrochemical Agrochemical

Slaughterhouses you have in UK use large quantities of TSC for application in animal blood. Usually they produce a 10% solution of TSC and water which gets applicated during the slaughtering process to prevent coagulation of the blood

Detergent & Cleaning Detergent & Cleaning

Trisodium Citrate is an excellent sequestering agent – when it attaches to calcium ions in water it stops lime scale interfering with soaps and detergents.

Holds key applications in specific areas of detergent manufacture within products that include Dish washing, industrial cleaners, laundry care and surface care detergents.

Food & Beverage Food & Beverage

Mainly used as a food additive typically as a flavourer or preservative

Utilised as a flavouring agent in certain commercial ready to drink beverages and drink mixes.

Also used to control acidity in some substances such as gelatin desserts

Can perform as a buffering agent or acidity regulator, resisting changes in pH.

Found also in other foods including ice cream, jams, sweets, milk powder, processed cheese, carbonated beverages and wine.

Found also in mini milk containers with coffee machines
